My understanding is that individuals can buy private stock unless it is S-Corp stock, is this accurate?

Yes, that is correct. Holding private stock will require an account with a self directed IRA custodian, preferably one that specializes in private stock and will be able to assist you in avoiding any prohibited transactions. Any shares must be valued at the end of every year, and you might want shares with liquidity issues.
