Is there any prohibited accounts like stocks, bonds, precious metals, mutual funds, etc. that do not allow the use of a Stretch IRA for the beneficiary versus annuities?

No, a beneficiary can hold the same assets in an IRA that an owner can hold. Be careful regarding precious metals. Precious metal ETFs are OK for IRAs.
