I know we can rollover a SIMPLE IRA to an IRA after 2 years. How do we determine how much can be rolled over?

After 2 years, there is no dollar limit to the amount that can be rolled over or converted. About the only issue would be if the SIMPLE IRA contained excess contributions of some type that were not eligible for rollover.
